Bachelor’s recipe: South Indian Vegetable Muffins
Here is the recipe for delicious vegetable muffins in a south Indian style
You will need the below ingredients for making 6 vegetable muffins.
500 gm of wheat flour, 75 gm of oats flour, 1 table spoon salt, 1 table spoon each of baking powder and baking soda, 2 eggs if needed, half-litre butter milk, 4 table spoons of grated cabbage and carrot, 2 table spoons of red chilly flakes, finely chopped coriander leaf and sliced 1 green chilly. 
Mix well the first ingredients: the wheat flour, oats flour, baking soda, baking powder and salt in a bowl. After mixing, add the vegetables, grated carrot, cabbage, chilly flakes, and green chilly with the flour. You can also add 2 beaten eggs to it. Strict vegetarians can opt out the eggs and can use flax seeds instead. In the end add the butter milk with it. Make dough soft like that of a chapatti mix.
Wait a few minutes for setting the dough. Then turn it into moulds using the spoon and place it in the baking pan. Bake for around 20 minutes in 220 degree Celsius.
Take the hot, rich muffins out and they are ready to eat now. This is a simple recipe, and the hot spicy veg muffins are really nutritious since they are rich with oats, wheat, milk and vegetables and cook without using a drop of oil.
